Superfood Blueberry smoothies 2 ways

So here we are… trying to eat and drink kale, spinach and swiss chard as much as we can..

Why you may ask, because…. It was Popeye’s favorite drink and now it is the drink to turn to in 2014.

I feel this incredible energy after drinking anything with these superfoods, and one of the reasons is because I blend some awesome ingredients to combine with this green dream supreme flavoring. It comes in the form of small powerful blue berries.

I have formulated two different recipes for these leafy greens, and here it goes. Hope you enjoy them as much as we do and our family does. ( They are my taste testers 🙂

Sambazon Blueberry Supreme Smoothie:

3/4 cup Apple juice

1/2  cup Sambazon Acai the original fresh superfood juice

2/3 cup almond milk

1 cup frozen blueberries

2 big handfuls of ( Taylor Farms Superfood Power greens) chard , spinach, kale

1 small blueberry activia yogurt

2 tsps of  Artisina raw coconut butter

half cup frozen ice

and blend in your handy blender,

Superfood Not so Green Smoothie :

3/4 cups of frozen blueberries

1 cup and a half of Superfood Power Greens mix ( chard, spinach, kale)

3 tsp of greek vanilla yogurt

1 cup apple juice

half cup of frozen ice

3/4 cup of almond / or soy milk

pinch of cinnamon

a small tsp of raw coconut butter ( I used Artisana)

1 banana

and blend this puppy up!!! Also delicious and satisfying 🙂

Today was one of those days, I knew it was coming. First day of classes started again ( college) for most of us it’s a stress filled, excited, and apprehensive day. I honestly was very excited to emerge myself back to late-night studying and bein g surrounded by students of all ages.  The one thing that was a bit difficult was making these muffins at 7 in the morning so I could be in time for class :p

But I want to commit to this blog, for myself, for my passion of writing and cooking, baking…. and for the followers I already have, which makes me so happy to know there are bloggers out there that already took interest in my and my twin’s creations, posts…  So I don’t want to disappoint you and myself..

I will juggle being a full-time student and keep creating recipes which I eat right up afterwards 🙂

I share with my family too, of course!!!

So I had some beautiful peaches in the fridge, good old-fashioned oats and the infamous Coconut Flour..

Muffins it was

Peachy Keen breakfast Muffins Recipe:

30 mins in 325 oven ( I used my convection toaster

1/2 cup oats ( quick cooking oats)

1/4 cup coconut flour ( if you want less dense, use less flour)

1/4 almond milk

1/4 cup coconut milk

1 egg

a nice handful of raisins or your favorite sweet granola

a pinch of cinnamon

a handful of shredded coconut ( depends how much you want)

4 Teaspoons of vanilla yogurt or greek vanilla

1 peach ( cut in cubes)

Everything will be incorporated in a bowl and whisked together..

Get your muffin tins and spray with some non-stick butter spray

 

Voila… enjoy 🙂

 

 

Cinna-mon French Toast with & Banana Nutter Smoothie

The most important meal of the day is El Desayuno (breakfast) 🙂

So I have been told, eat like a Queen in the morning and a princess at noon.

There is some logic to that. You will have more hours during the day for your metabolism

to break down a fulling breakfast and as the day progresses eat smaller portions.

So i decided to make myself Cinna-mon Cheese Bread French Toast and a Banana-Nutter smoothie.

Not very calorie friendly but it kept me full for hours and with plenty of energy throughout the day.

Here is the recipe guys, I actually used the Pan De Queso from Publix’s Bakery again.

Cinna-mon Cheese bread french toast

 

 

 French Toast Recipe

A hot skillet ( add butter or a bit of olive oil)

Cheese Bread ( Pan de Queso from Publix) I did 5 slices

Mix for french toast:

1 egg

1/2 tsp of cinnamon

1 tsp of vanilla extract ( I used mexican)

1 tablespoon of regular milk or almond milk

a handful of raisins

Toppings:

cinnamon sugar ( sprinkled on top )

sliced bananas

Agave nectar syrup or maple

Voila enjoy!!

 Banana-Nutter Breakfast Smoothie: for 3 servings

Just add in your blender

1/2 cup crushed ice

3/4 cups apple juice

3/4 cups of almond milk or soy

3 tsps of Greek yogurt ( I used Cabot greek)

1 tsp of peanut butter or almond butter

Toppings:

Chia seeds

cinnamon sugar

 

Open-faced turkey “n” egg sandwich feat: Straw-very Oatmeal smoothie

It is a deconstructed, open-face Turkey and Colby cheese sandwich

sounds so fancy and complicated but I assure you it was not.

There was a sunny side up egg with herbs de Provence and

a toasted amazing Pan de Queso from my beloved Publix..

This recipe is too simple to be a recipe, but the star of this plate earlier was that bread.

 Easy Peasy Recipe:

3 slices of Pan De Queso from your nearby Publix

1 or 2 slices of turkey ( your choice)

1 slice of colby jack or cheddar

1 egg ( cooked sunny side up style or mcmuffin style)

herbs de Provence ( a pinch on egg with sea salt)

Hot butter or oil on a sizzling skillet

Assemble together or not thus deconstructed 😉

5 diced strawberries

3/4 cup of oatmeal ( quick oats)

1 cup of almond milk

1 tsp of coconut butter

3 tsp of plain greek yogurt

a bit of honey or agave nectar

On top chia seeds or Bee pollen granules

Voila and Enjoy…

The Tales of 2 Bowls…… oatmeal lovin

As I promised here is my go to basic oatmeal recipe for a hearty breakfast…… This oatmeal kept me full for almost 3.5 hours :0    that is a good thing when you are on the road, on the run and don’t want to eat unhealthy snacks throughout the day to keep you stuffed.  The difference of feeling full =) and stuffed 😦

 So the BASIC RECIPE ( foundation of the bowl) ( 1 serving)

1/2 cup of quick cooking oats

1 cup of milk/ almond milk/ or if feeling really healthy water

a pinch of sea salt

1 banana smashed ( preferably spotted for sweeetness)

2 to 3 tsp of greek yogurt ( plain)

 

And these are the Add-ins/ Topping to make it extra fancy

Divine oatmeal Chocolate Bowl

a handful of dark chocolate chips

a pinch of chia seeds

a pinch of ground coffee

a tsp of coconut butter and voila!!

 

Apple & Spice and everything nice oatmeal

1 apple ( diced in cubes)

1/2 tsp cinnamon and a pinch of cinnamon sugar

a pinch of brown sugar or agave

a tsp of coconut butter

a handful of raisins and voila!

Bella Ciao Banana Chia Smoothie

Crazy about frozen Bananas!! nothing is more refreshing and satisfying than a cold frozen banana smoothie. Of course this was accompanied by a beautiful croissant and loaf of Rosemary Bread of Gran Forno Bakery of Las Olas. It is a small quaint bakery in Downton Fort Lauderdale and it is perfect with a delicious smoothie 🙂  We can’t deprive ourselves too much because then we really would go Bananas ( not good by the way :0).
